Fine celery cream soup

Ingredients Fine celery cream soup with fresh herbs

 

  • 1 onion
  • 750 g celery
  • 1200 ml vegetable broth
  • A little salt
  • A little pepper
  • 150 ml condensed milk
  • 3 - 4 teaspoons of carob gum
  • 2 tablespoons of chive rolls
  • 2 tablespoons of basil (chopped)
  • 2 tablespoons of fresh cress
  • 6 tablespoons of pumpkin seeds

Preparation Fine celery cream soup with fresh herbs

 

1. Dice the onion, grate or finely dice the celery.

 

2. Bring the broth to the boil, add celery and onion and cook for about 10 minutes over medium heat.

 

3. In the meantime, toast the pumpkin seeds in a pan without fat and set aside.

 

4. Puree the soup. Season to taste with salt and pepper. Whisk condensed milk with locust bean gum and use it to thicken the soup.

 

5. Bring to the boil again and stir in the basil and chives. Arrange on plates and serve sprinkled with the cress and pumpkin seeds.

In addition, secondary plant substances that support the body in the fight against free radicals. Most of the herbs used here are also considered medicinal plants with very special, health-promoting properties. They all bring in their vital substances in this delicious dish and together they develop an even stronger effect.
