Ingredients raw fruit and vegetables salad
- 2 carrots
- 200 g kohlrabi
- ½ apple
- 1 zucchini
- 3 tablespoons of vinegar
- 5 tablespoons of orange juice
- 4 tablespoons of oil
- 1 teaspoon of salt
- ½ teaspoon vegetable stock powder or paste
- 4 stalks of parsley or the green of a carrot
- 50 g walnut kernels
Preparation raw fruit and vegetables salad
1. Clean the carrots, kohlrabi and apples, core the apple.
Cut everything into large pieces.
2. Put all the ingredients on the list of ingredients except
for half of the walnuts in the blender. Chop coarsely for 3 seconds on a low
setting. Push down with a spoon or spatula. Chop for another 4 seconds on a
medium setting. A lumpy salad should be created.
3. Arrange the salad and serve sprinkled with the remaining
walnuts.
Good to know:
Carrots contain beta
carotene and the protective substance falcarinol. These protect the cells and
can even improve the texture of the skin. Do not throw away the leaves of the
carrot. They contain an enormous amount of vital substances, such as extremely
high levels of calcium and magnesium, vitamin A and vitamin K. They can
effectively detoxify and tighten the connective tissue. The leaves are suitable
as a component of salads, green smoothies or, like parsley, as a decoration on
the plate.
Zucchini are
extremely low in calories and should therefore not be missing in any diet! From
a mathematical point of view, zucchini does contain some carbohydrates, but on
closer inspection these are largely indigestible for humans. Rather, it is
valuable, filling fiber. Zucchini can also help detox because of their high
potassium content.
Like all types of cabbage,
kohlrabi is rich in vitamins C, A
and K. B vitamins and folic acid, magnesium, iron, calcium and phosphorus,
selenium and potassium.
The kohlrabi also contains mustard oils that kill bacteria.

drains water.
