Ingredients Green asparagus with turkey and pecorino cheese

  • 1200 g green asparagus
  • 1 tablespoon pumpkin seed oil
  • 3 tablespoons olive oil
  • 50 g pecorino cheese, coarsely grated
  • 150 g smoked turkey breast
  • Pepper
  • Salt
  • 1 teaspoon agave syrup
  • 1 tablespoon white wine vinegar
  • 6 tablespoons yogurt 0.1 fat
  • 1 teaspoon pumpkin seed oil

 

Preparation Green asparagus with turkey and pecorino cheese

 

1. Peel the asparagus (with green asparagus it is sufficient to peel only the lower third), cut off the woody ends. Cut the asparagus spears diagonally into pieces.

2. Heat 1 tablespoon of olive oil and fry the pieces in it. Fry for about 8 minutes over a medium heat, do not stir too often so that the asparagus tips are not destroyed.

3. Remove the asparagus from the plate, season with salt and pepper and season with the pumpkin seed oil.

4. Arrange the asparagus on plates, drape the turkey breast on top and add the pecorino cheese.

5. In the meantime, whisk together vinegar, agave syrup, yoghurt, 2 tablespoons of olive oil, salt and pepper to make a salad dressing.

6. Drizzle the sauce over the asparagus with a spoon and serve immediately.

Asparagus  provides fiber, folic acid, a particularly good calcium-magnesium ratio, B and E vitamins, carotenoids and lots of potassium. Therefore, the asparagus effectively stimulates kidney activity and drains water. A special substance in asparagus is the abundant inulin, a fiber. Inulin is very helpful for people, although it cannot be digested and is therefore virtually calorie-free. Because inulin nourishes the positive intestinal bacteria in the digestive system. The fiber stabilizes the intestinal flora. Inulin is so effective that it is also used in conventional medicine.

The  cheese  in this dish provides calcium and phosphorus. Both strengthen teeth and bones. In combination with the superfood asparagus, this creates a dish for body and soul. 

Turkey meat  is rich in protein, contains only about 1% fat, but a lot of vitamins B6, B12, and minerals such as potassium, magnesium, zinc and iron. Due to the high protein content, it saturates for a long time. Pay attention to organic meat, because little or no antibiotics are used in the organic fattening and the animals live in much better conditions - which is reflected in the taste.

The lactic acid bacteria contained in  yoghurt  (e.g. bifidobacteria) promote digestion and thus the absorption of important micronutrients. By the way, they also push the immune system. This increases the efficiency. And whoever feels more vital, automatically moves more - this in turn increases the total calorie consumption.

Pumpkin seed oil  contains large amounts of zinc. Zinc, on the other hand, is important for the immune system and activates enzymes that regulate appetite and prevent cravings. In addition, the kernels of the pumpkin bring a lot of chlorophyll, which has a detoxifying effect , among other things
