Ingredients Minced meat and cheese soup "light"
- 500 g zucchini
- 250 g ground turkey
- 200 g soy cream or cooking cream (7% fat)
- 200 g processed cheese
- 2 large onions
- 2 cloves of garlic
- 500 ml vegetable stock
- 1 tablespoon of oil
- salt
- Chilli powder
Preparation Minced meat and cheese soup "light"
1. Coarsely grate the zucchini. Dice the onions. Peel the
garlic and chop in to fine slithers.
2. Heat the oil in a saucepan, add the onion, garlic and minced
meat and fry together.
3. When the minced meat is cooked, deglaze with the stock. Pour
in the soy cream or cooking cream and stir in the processed cheese.
4. Add the zucchini to the broth and bring everything to a boil.
5. Season to taste with salt and chili powder and simmer until
the zucchini have the desired consistency.
Tip: This soup tastes particularly delicious if you have been able to sit through it for a while, e.g. overnight.
Good to know:
Zucchini are extremely low in calories and should therefore not be missing in any diet! From a mathematical point of view, zucchini does contain some carbohydrates, but on closer inspection these are largely indigestible for humans. Rather, it is valuable, filling fiber. Zucchini can also help detox because of their high potassium content.
