Ingredients beetroot salad

 

  • 3 spring onions
  • 2 carrots 
  • 300 g beetroot
  • 2 apples
  • 4 tablespoons of lime juice
  • 6 tablespoons of orange juice
  • 4 tablespoons of oil
  • 1 teaspoon of salt
  • 1 pinch of chili powder
  • 5 stalks of coriander or parsley
  • 3 beetroot leaves (if available)
  • 25 g walnuts

 

Preparation beetroot salad

 

1. Clean the carrots, beetroot and their leaves, spring onions and apples, core the apples. Cut everything into large pieces. 

2. Put all the ingredients on the list of ingredients in the blender except for the walnuts. Coarsely chop for 4 seconds on a medium setting and push down with a spoon or spatula. Chop for another 3 seconds on a medium setting.

3. Arrange the salad and serve sprinkled with the walnuts.

 

Good to know:

 

beetroot  st rich in the phytochemical betaine. It stimulates the liver and biliary function. This eliminates toxins quickly and thoroughly. Beetroot is a good source of folic acid. This helps repair damaged tissue. The iron content is also remarkable. The beetroot should help with tiredness and fatigue, and listlessness. The leaves of the tuber contain an enormous amount of vital substances, e.g. seven times as much calcium and three times as much magnesium as the beet itself, more than 200 times as much vitamin A and plenty of vitamin K. The leaves are therefore ideal as a component of salads, green smoothies or - cut into small pieces - as a green decoration on the plate.

Spring onions  contain sulfur compounds that have an antioxidant and antibacterial effect. Mustard oils inhibit the growth of pathogens such as bacteria, viruses, yeasts and fungi. They therefore support the immune system in difficult times, such as stress or a diet.

Carrots  contain beta carotene and the protective substance falcarinol. These protect the cells and can even improve the texture of the skin.

Apples  contain around 300 different bioactive substances that are good for the body! Because they are so rich in fiber, which swells up in the stomach and intestines, apples keep you full for a long time and thus support weight loss.

Walnuts  contain filling protein and minerals. The high-quality omega3 oil and vitamin E it contains protect your cells from free radicals and prevent cardiovascular diseases. Another plus point: biotin in the nuts ensures beautiful skin, hair and fingernails.

Coriander or parsley have  a highly concentrated nutrient mix of vitamins and minerals. Chlorophyll protects against free radicals and promotes the regeneration of cell damage. It also supports the transport of oxygen in the blood and thus ensures performance and a good mood. Parsley is also very dehydrating, and coriander regulates digestion.

Chili peppers  owe their heat to the substance capsaicin. The consumption of capsaicin in spicy dishes can not only destroy bacteria and lighten the mood, but above all it can really boost the metabolism, increase fat burning and curb appetite. So if the sharpness makes you sweat on your forehead, you can be happy: Your metabolism has been really pushed by the capsaicin and thus ensures that feeling of heat!
